We house the Learning and Teaching Subject Network (LTSN) for hospitality, tourism, leisure and sport. Research
Staff in the Department of Hospitality, Leisure and Tourism Management are actively involved in academic research in a number of focused areas. Their research activity and publications are characterised by their application to specific industry sectors and their integration with the Department's extensive consultancy services. The key areas of research focus are: Consultancy The Department has an excellent reputation for the quality of its consultancy and contracted research with external companies and organisations. Major projects have included consumer trials for companies including Mars, Marks and Spencer, and Proctor and Gamble. We have considerable experience of projects in management accounting and financial management, and clients have included Holiday Inn Worldwide, the Savoy Hotel Group, Queens Moat Houses and Ciga Hotels. Other clients have included Scher International and Thorn EMI. We have also recently completed a study of the attitudes of managers and tenants to training for Hydes Anvil Brewery, Manchester. We have worked extensively with academic and commercial organisations abroad. In a major project supported by the British Council, we are currently working on curriculum and resource development for hotel and restaurant management education in Bulgaria. The Centre for Environmental Studies within the Hospitality Industry (CESHI)
The Department of Hospitality Leisure and Tourism Management established the Centre as the focus for its research, consultancy and continuing professional development initiatives in environmental management, sustainable development and corporate social responsibility. This reflects the growing number of social and environmental issues which face today's international hospitality industry and increasing concern about environmental issues amongst consumers. The Centre undertakes targeted research and disseminates the findings of this research to ensure that hospitality businesses can meet sustainable development challenges and reap the business benefits of practical improvement programmes. Research has focused on sustainable tourism certification, waste minimisation and management, energy conservation, sustainable food, staff training and development and practical environmental initiatives for hotels. All of the Centre's work is supported by external funding and our clients range from hotel businesses to government agencies, tourist boards and other research establishments. Mission To provide practical, high quality research and consultancy services to industry, governments and academia on all aspects of sustainable development as it relates to the tourism and hospitality industries. Projects The Centre is involved in many activities and projects with local and national partners addressing issues related to environmental management and sustainability. Current projects seek to: • influence government policy on glass recycling • build a network of the most influential hoteliers in London and spur them on in achieving their environmental ambitions • provide guidance to the hospitality industry on the issues surrounding sustainable food purchasing Education The Centre runs an undergraduate module 'Environmental Management in Hotels', a resource-based module, which examines the impact of the hospitality industry on the environment and looks at ways in which a hotel can improve its own environmental performance while gaining financial benefits for the business. Centre staff also supervise undergraduate dissertations, and MSc and PhD students in the broad subject areas of tourism, the hospitality industry and the environment. Programmes of Study The Department offers a full portfolio of programmes at both undergraduate and postgraduate level. It is one of the leading centres in the world for postgraduate provision in hospitality management. At undergraduate level our modular programme offers full and part-time opportunities leading to honours degrees in Hotel and Restaurant Management, International Hospitality Management and a joint honours programme in Hospitality Management Studies in combination with one from over 100 second fields of study. The portfolio of taught master’s degrees includes the MSc in International Hospitality and Tourism Management, International Hotel and Resort Management and MSc in International Tourism Marketing. An AMBA accredited MBA programme is available through the Business School. The Department is also a leading partner in the "University for Industry ... hospitality worldwide" which delivers undergraduate and postgraduate learning through the workplace. All masters degree students are required to complete a dissertation or project, many of which contribute the research focus areas. We have an impressive international reputation for the quality of its higher degrees by research (MPhil/PhD). The research strategy is highly focused and all research students are required to conduct research in areas that contribute to this strategy. Students on the research programme are investigating areas including strategy implementation, emotional labour, financial decision making, diversity management and relationship marketing. Undergraduate Programmes We offer both single and joint honours degrees at undergraduate level. Our undergraduate programmes are modular in structure. This flexible approach enables students to tailor their study programmes in line with their career aspirations and personal interests. BSc in Hotel and Restaurant Management Single Honours Degree This single honours degree programme has been designed to provide you with a challenging learning experience and to prepare you for a management career in the hospitality industry. It can be studied full-time as a four year sandwich course or part-time over a longer period. Subjects covered include marketing, human resource management, accounting and financial management, and hotel and restaurant operations management. The second year is spent in industry on a period of supervised work experience, providing students with an excellent grounding for the advanced management modules which are taken in subsequent years. Career prospects Every year, a high proportion of Hotel and Restaurant Management graduates find fulfilling career opportunities. Recent graduates have found employment in food service consultancy, human resource management, business development and as fast track management trainees in prestigious hotel and restaurant companies. The course provides an excellent basis for work in other industries, particularly those that have connections with hospitality, such as international travel, tourism and leisure. Louise Willcock, Sales & Marketing Director, Customised Contract Catering BSc/BA in Hospitality Management Studies Joint Honours Degree Hospitality Management Studies provides you with a modern, academically rigorous and vocationally relevant management education. Within core modules, you will study various management disciplines, reflecting the interdisciplinary nature of hospitality management, while elective modules allow you to pursue areas of special interest. Part of your programme of studies focuses on restaurant operations management and you have the opportunity to develop your operational skills in our fully equipped kitchens and highly acclaimed Brookes Restaurant, which is open to the public. Normally a three year full-time programme, this highly flexible honours degree is also available by part-time study. In addition to Hospitality Management Studies, students select a second subject to study from more than 50 possible options. Our programme is designed to give maximum choice while at the same time equipping you with the essential knowledge and skills for a management career in the hospitality industry or other service industry. There is no compulsory work experience, although students studying a language as their second subject often work in hotels or restaurants abroad to meet the requirements of their language programme. BSc in International Hospitality Management Single Honours Degree During your first year, the core modules develop your basic understanding of the industry, providing you with the necessary skills, knowledge and understanding to help you in your supervised work experience and future advanced studies. You choose your introductory modules in areas such as tourism, business law, economics and accounting. Your second year is spent in paid, supervised work experience. This management-based course will prepare you for employment in the public or private sectors, managing, developing and planning tourism resources, and provide an appreciation of the international dimensions of the tourism industry. You will gain a multidisciplinary understanding of tourism from our team of specialist lecturers who deliver the programmes. Approximately one-third of students joining the course come from countries in Europe, Africa, South-east Asia and South America. This cultural diversity helps students to acquire the knowledge and skills needed to understand and manage complex environments from an international perspective. Featured Research Project ESRC pages ESRC Funded Research Project Project Title: Socio-Cultural factors, ethnic minority entrepreneurial orientation and a firm's growth: A comparative study of Turkish and Chinese small firms in the UK Duration: 24 months (Sept 2006 - Aug 2008) Researchers: Dr Levent Altinay and Dr Catherine Wang (Brunel) This project aims to understand how the entrepreneur's socio-cultural background influences the firm's entrepreneurial orientation which in turn influences firm growth with reference to both Turkish and Chinese small firms in London, operating in a variety of sectors including manufacturing, retailing, and catering. The project will provide a comprehensive and detailed analysis of which socio-cultural attributes may facilitate or inhibit ethnic minority entrepreneurship in the process of firm growth and survival in different industries. It will provide recommendations to ethnic minority firms on how to gain a competitive edge and sustain it during both the start-up and break-out stages of business development |
